sourdough

I’ve been making sourdough bread for about a year now. It’s a little like architecture, if you get the different parameters right it can be amazing. It has a life of its own and relies on the structural integrity of the gluten, the living inhabitants providing the magic, the simplicity and integrity of the basic ingredients to give something sustaining to the family, and the effort at achieving a goal that you know is worth it.

And when you don’t get those parameters right…..weeelllll yes it all goes a bit flat ….. skeet shooting anyone?
